Fusion Melding Food, Art & Design

Fusion, which is in the midst of its busy second season on Wilmington Avenue, is a natural for diners who love really innovative and remarkable food plus gloriously artistic presentation.
Fusing not only Asian and contemporary American flavors, but art and design as well, Fusion has been one of our favorite Rehoboth restaurants from the day it opened its doors.
Like its name implies, Fusion delights in combining ingredients and styles to create unique recipes. On a recent Saturday evening, I sampled the Duck Salada cornucopia of shredded duck, marinated in flavorful Asian seasonings, accompanied by red bell peppers, greens and Hoison sauce. It was a huge, almost entree-sized salad that started out as a special on the menu, and has since been added full-time to satisfy customers who will start their meals with nothing less. I dont blame them one bit!
We also sampled the chefs special Miso Soupricher and much more exciting than the thin broth generally served with Japanese mealsa delightful starter.
Having visited Fusion on previous occasions and sampled their seafood fare (the barely-seared tuna steak is amazingit ruined me for more well-cooked tuna and was difficult to pass up this time, but...) we went for the chops. I ordered the lamb chops served with wilted spinach and sweet smashed potatoesisnt it amazing the come-back mashed potatoes have made in contemporary American restaurants! The presentation was as much sculpture as dinner, and the lamb was perfectly cooked medium rare, but crispy on the delicately spiced exterior. And I loved those potatoes, sweet and sinful.
The pork chop entree came with a blend of rice and wilted spinach and a tangy and savory bean and pepper accompanimentalso imaginatively presented and creatively prepared.
At Fusion the appetizer and entree portions are ample, making dessert difficult to managebut not impossible. We couldnt resist their quickly-becoming-legend Chocolate Tower. Splitting one, we dove into the dark chocolate lace tower, filled with a light chocolate mousse, accompanied by fresh seasonal berriesa great finish.
Completing the Fusion experience to perfection was the attentive serviceour waiter Joe never hovered but was always there when appropriate. The busy restaurant did not appear in the least bit overwhelmed by the typical August Saturday night in Rehobothand from a diners perspective, the restaurant is fairly spacious, so you can avoid sharing your conversation with the next table. Always a bonus. Fusion is a terrific name for the restaurant, as its a combination of all those ingredients that make for a splendid dining experience at the beach.
